How to Cook Haggis: A Traditional Scottish Recipe Guide

Traditional Ingredients 

  • One sheep’s stomach (cleaned and scalded)
  • 1 sheep’s liver
  • 1 sheep’s heart
  • 1 sheep’s lungs
  • 250g beef suet 
  • 2 onions, finely chopped
  • 1 cup oatmeal
  • 200ml beef stock

Seasoning 

  • ​​​​​​1 teaspoon salt (taste wise) 
  • 1 teaspoon ground black pepper (taste wise)
  • 1 teaspoon ground coriander
  • 1 pinch of grated nutmeg
  • ½ teaspoon ground cayenne pepper (optional) 

Preparation

 Prepare the Organ 

  • First, wash the Sheep’s liver, heart, and lungs thoroughly. Using cold water, remove all the excess fat and connective tissues. Also, cut away the windpipe.
  • Then, place the offal in a large pot and cover with cold water. Bring to a boil, reduce the heat, and steam the organs for 1 to 2 hours or until tender. 
  • Then drain the offal and allow it to cool slightly. Remove any Scum if needed, and then finely chop or mince the offal. 
  • Then, follow the same process of thoroughly cleaning the sheep’s stomach and removing any fat or membrane. 
  • Then, soak it in cold water with vinegar to clean it properly, rinse it well, and set it aside. 
  • Cooking the Oats 
  • If the lamb has any fat, melt the suet in a large pan over low to medium heat. Then, add the chopped onion until it is soft and golden. 
  • Then lower the heat and that pen at the oatmeal and stir it for a few seconds so that the oats absorb the flavour of the suet and onion. 

Combining 

  • Now, add the beef stock to a large bowl, or, if you want, add the lamb stock (from the boiling offal). 
  • Add minced offal, cooked oat mixture, ground black pepper, coriander, cumin, Cayenne pepper, salt, and nutmeg to the stock. 
  • Cook until the stock has reduced and the mixture is well combined and moist but not wet. Then, let it cool down.
  • Stuffing 
  • After that, clean the sheep’s stomach, stuff the prepared mixture, and stitch the opening.
  • Also, ensure you don’t stuff too much mixture, as the mixture can expand during cooking, so the feeling won’t escape and spill everywhere.

Cooking 

  • To cook the Haggis, pierce the Huggies several times with a needle so the steam can go out easily. 
  • Then, put enough water in a pan to easily cover the Haggis and simmer it for 1.5 to 2 hours. The temperature of the day should be something around 75°C.
  • If you want to cook the Haggis​​​​​​ in the oven, preheat it to 180° c, place it in a bowl, and cook it for 40 to 50 minutes. But there is a high chance that the Haggis will turn dry, so it’s better to use a traditional method. 

Serving 

  • Once the Haggis is cooked, carefully remove it from the pot or oven and let it rest for 5 to 10 minutes. 
  • After that, slice the Haggis in thick rounds and serve the traditional dates with mashed turnips and the best potato. 
  • Then, if you want, you can also try the Haggis with the whisky sauce to enhance the test even more.
